Rhubarb fizz – refreshing home-made rhubarb soda

Have you ever thought of discovering Icelandic miracles and treasures in truly Mediterranean temperature? Sounds like a joke, doesn’t it? But fortunately, it’s not! Almost always cloudy Iceland has brightened recently as never before and has surprised the whole world because of a real heatwave. As for this climate zone, twenty-six degrees Celsius are real tropics. Well, it can be even called as merciless heat pouring from the arctic sky.

Icelanders bask in this extraordinary tropical surprise, but as people of the North, unaccustomed to this type of entertainment, they complain a little too. The whole nation in one moment shed layers of clothing made from sheep’s wool and is catching the sunshine in home gardens with views of the extending fjords. If you can’t drop by to see the tropical face of Iceland, try an Icelandic way to cool off in your country. Just prepare a glass of refreshing rhubarb soda! As we have already written, Icelanders simply adore rhubarb.

Rhubarb Soda

The secret of perfect rhubarb soda is obviously rhubarb syrup with its intense flavour. Of course, it can be used not only to prepare this beverage. We love it with ice-cream, cakes and other desserts and we also add it to different kind of cocktails. We recommend it with hands on our hearts – rhubarb syrup will give exceptional flavour to everything from club soda to all kinds of alcoholic beverages. It has a perfectly balanced combination of the sweet and the sour. And the icing on the cake is a bit of vanilla. There is really nothing better to cool you down in the summer.

Rhubarb Soda

Ingredients:

  • 1 kg rhubarb
  • 1 lemon
  • 350 g sugar
  • vanilla seeds from 1 stick

Method:

  1. Wash rhubarb, cut off the leaves and cut rhubarb stalks into 1 centimeter pieces.

  2. Combine rhubarb with sugar, squeezed lemon juice and vanilla.

  3. Simmer it for around 30 minutes under a lid and stir occasionally.

  4. Strain it, then pour it to a bottle or a jar. It can be kept for up to two weeks in the fridge. If it is pasteurized, it can stay in a cool place even a year.

  5. Pour the syrup to a glass (0,5-1 cm), add ice cubes and pour cold club soda (or sparkling water). Optionally, serve it with a slice of a lime.
